Beef Stew (Caldereta)




Ingredients;


Beef shank 1kl cut into cubes
Potatoes 4 medium sizes, cut into cubes
Carrots 4 medium sizes, cut into cubes
Tomato sauce 1 pack (250g)
Liver spread 1 small can (115g)
Olives pitted green 1/2 cup
Bell pepper 1pc sliced thinly
Onion (white) 4 medium sizes, diced
Garlic 1 head, crushed and finely chopped
Beef cubes 2pcs
Cheese 1 cup
Water 3 cups
Cooking oil 1/2 cup
Sugar 1tbsp
Bay leaf 3 pcs
Salt and Pepper to taste


Procedures;


Fry potatoes and carrots in oil until it changes color then take them out and set aside
Next saute onion until translucent then add the garlic
Add beef and stir occasionally for about 2 minutes add water then let it boil
Add beef cubes and simmer for about 1 1/2 hr
When the beef is tender already, add tomato sauce and simmer for 1minute
Then add liver spread, sugar and bay leaf
Add potatoes, carrots and olives simmer for another 5 minutes, add water if necessary
Lastly add cheese, salt and pepper to taste.


Serves best with white rice.....Enjoy
